Select fish with moist, not wet, flesh. Avoid any that is drying at the thinner, tail end. If dyed, the colour should be bright (I prefer the undyed variety, which are a pale, creamy colour rather than bright yellow).

To prepare

Cut the fish into portion sizes.

To freeze

Interleave with polythene interleave sheets or clingfilm (plastic wrap) and pack in polythene bags. Remove the air, seal, label and freeze.

STORAGE TIME: 3 months

To thaw and serve

Poach in milk or water from frozen, allowing 3–5 minutes’ extra cooking time.
